The base Cabernet from this terrific estate is the 2017 Cabernet Sauvignon, which checks in as 83% Cabernet Sauvignon, 9% Merlot, and the balance Petit Verdot and Cabernet Franc. It has beautiful notes of crème de cassis, graphite, tobacco, and ground herbs as well as a dense, rich, concentrated style on the palate. This terrific Cabernet is going to benefit from 3-4 years of bottle age and cruise for upwards of 15 years (or more) in cool cellars.

Stephanie became interested in wine as an exchange student in France. After graduating from the University of California at Davis, she worked at a small winery in the Sierra Foothills, learning about cellar operations and lab analysis, then she moved on to a position in enology at Bogle Vineyards. In 2004, Stephanie joined Cakebread Cellars as an enologist and was soon promoted to assistant winemaker. In 2012, she became project leader for pinot noir, which remains her favorite varietal of the Cakebread Cellars wines. Today she oversees all winemaking operations, upholding the winery’s style of consistent, balanced, age-worthy wines that pair well with good food and good friends.

This wine opens with aromas of ripe golden apple, white peach, and notes of oak. On the palate, apple and pear characters are balanced by fresh acidity, and the finish is clean, with appealing mineral notes. This is a versatile food-pairing wine—we love it with fresh salads, grilled scallops, and nearly any selection of cheeses.

Bright, high-toned aromas of ripe boysenberry, blackberry, and dark cherry fruit are coupled with fascinating floral and forest-floor spice scents in the captivating nose of this wonderfully complex mountain cabernet. Dense and deeply concentrated on the palate, the 2015 Dancing Bear Cabernet offers intense black fruit flavors that segue into an extremely long, lush, dark-fruit finish laced with invigorating spice and mineral tones. Beautifully structured by big, but supple tannins and fresh acidity, the 2015 vintage, despite its intensity, displays a charming elegance. Still in its formative years, this mountain jewel will glitter even more brightly with another decade’s aging. Sourced from our Dancing Bear Ranch estate vineyards, located on the rugged slopes of Howell Mountain in northern Napa Valley.
